Cooking Tofu with Curry Sauce

Restaurant-style curries are typically prepared in two stages. First, the curry sauce is built separately using a spice mix, or you may use a frozen curry sauce purchased from Chilli Farms. Then, Tofu is cooked independently and simmered in the sauce until well combined.
For 500 ml of curry sauce, use approximately 400g of raw firm tofu , or 300 g if already cooked.
This method allows better control over texture, tenderness and flavour balance. The sauce remains refined, while the protein or vegetables are cooked to their ideal doneness.

Directions
1️⃣ Preparation
Place the block of tofu onto a tray and wrap it in paper towels. Place another tray on top to weight it down and let it sit for 10-15 minutes, to pull out excess moisture.
Dice Tofu into approximately 1.5 cm × 1.5 cm pieces for even cooking.
Cooking Tofu directly in the sauce is not recommended. Do not cook raw ingredients directly in the sauce inside the slow cooker, as meats, vegetables and poultry naturally contains approximately 30–40% water, which is released during cooking and can dilute the curry sauce, making it watery. And if you cook it longer to fix it you’re likely to overcook the tofu.
Choose one method only — boiling, shallow frying, baking/roasting, or slow cooker. Do not combine methods.
While we don’t use any seasonings for our tofu you’re welcoome to use any you’d like.
2️⃣ Baking Method
Preheat your oven to 200 or 180 fan forced.
Place the chopped cubes of tofu onto a baking tray with a wire rack evenly spaced.
Once your oven is at temp place the tray inside and cooked for 20-25 minutes; while checking on it after 15.
the tofu is done when its golden brown all over and still has a spongy/bouncy texture.
Pan-Frying Method
Preheat your pan on medium heat for 1-2 minutes.
Put the oil in the pan and let it heat up or a minute.
Put your tofu in the pan evenly spaced out. No Overcrowding. You can do it in multiple batches if neccessary.
Cook for 2 minutes a side on all sides till golden brown and crispy all over.
