  • 100 ml sunflower oil
  • 200 g onion, finely diced
  • 50 g ginger–garlic paste
  • 1 sachet Chilli Farms Achari Spice Mix
  • 150 g tomato pasteΒ (recommended: Leggo’s)
  • 25 g tamarind paste
  • 25 g lemon juice
  • 500 ml water * Use less water if you prefer a thicker curry sauce.

πŸ‘¨πŸ³ Cooking Instructions - Prepare the Curry Sauce

  1. Gather Ingredients - Assemble all ingredients before starting.
  2. Ginger–Garlic Paste - Blend equal parts ginger and garlic into a smooth paste. Add a small amount of water if required. Use water kept aside from the recipe.
  3. Cook Onions - Heat sunflower oil in a saucepan over medium heat. Add the diced onions and sautΓ© until light brown. Do not cook on high heat. This step takes about 12–15 minutes. Exercise patience.
  4. Add Ginger–Garlic Paste - Stir in the paste and cook until the oil begins to separate.
  5. Add Spice Mix - Lower the heat, add the Achari Spice Mix, and cook until the oil separates again.
  6. Add tomato paste, tamarind paste, and lemon juice. Cook for 5 minutes, stirring continuously until bubbles begin to rise.
  7. Add Water & Simmer - Pour in the water, mix well, and simmer until rapid bubbles form and the sauce thickens slightly.
