Mumbai Potato Dry

TOTAL TIME (PREPPING & COOKING)

Stove top - 45 minutes.

 

YIELD

Approx 1 lt .

 

INGREDIENTS

1 kg potato

5 g turmeric powder

10 g salt

1.5 lt water

100 ml oil

40 g ginger

40 g garlic

50 g Chilli Farm’s mumbai spice mix

50 g fresh coriander leaves (optional, only for garnish)


Garlic free

  • Do not add garlic.

 

NOTE

1.Please be aware Chilli Farm's spice mix sachet includes salt.

2.The brands mentioned above are used for testing the recipe. You are welcome to use your preferred brands. Please note the outcome can potentially vary based on the choice of ingredients.

 

STOVE TOP COOKING INSTRUCTIONS 

1.Gather all ingredients.

2.Peel potato and dice it into medium size chunks. Approx. 1.5 cm size.

3.Boil the potato in water with turmeric powder and salt, set aside.

4.Blend ginger, garlic to a smooth paste. Use little water if required, set aside.

5.Fine chop fresh coriander leaves, set aside. Optional, only for garnish

6.Heat oil in a sauce pan.

7.Add ginger/garlic paste and cook until oil comes to the top.

8.Add spice mix sachet and cook on LOW FLAME until oil comes to top.

9. Add boiled potato to sauce pan and stir fry to coat spice mix to potato.

10.Switch off the flame, garnish with coriander (optional), and rest it on closed lid for 5 minutes.

 

SPICE MIX INGREDIENTS:

Cumin seeds, mustard seeds, fennel, coriander, turmeric, and salt. For medium and hot versions Kashmiri chilli and black pepper is included.
