The chicken was cooked as per the directions except I cut the chicken into very small pieces. The curry was cooked the day before. I purchased two packets (12 in each) of mini Vol au Vents. I heated the shells in the oven for 4 minutes, reheated the curry in the microwave and then filled each shell with the chicken curry and sprinkled the top with some chopped coriander. My brother kept the leftover curry and will use it as a filling for his toasted sandwiches. Easy peasy, took about 6 mins. to heat and plate up before serving. A very delicious light snack before lunch.
